5 Summer Tacos To Devour With Your TBR Pile!

I originally came up with the idea for this post before going to a conference in San Antonio in June. Everyone likes tacos, right? They’re like sandwiches, but people actually look forward to eating them. There’s an infinite number of toppings and combos, so there’s something for everyone. Here, in no particular order, are my top tacos for summer:
1. The “traditional” retro Tex-Mex taco.
I grew up in the eighties, so Mexican food meant going to the joint in the strip mall and ordering the hard-shelled, orange-bleeding pile of ground beef, lettuce, tomato, and cheese. This kind of taco still brings back memories of long summer vacation evenings.
2. Barbecue tacos.
The husband wants tacos. The wife wants barbecue. These are the ultimate compromise. My favorite is the Memphis Taco from local Atlanta chain Taqueria del Sol.

3. Fish tacos.
Yes, these had to be in there somewhere. Nothing says summer like fish. Grill it, fry it, pan sear it… Just don’t overcook it. Put it in a tortilla with some slaw or salsa, and you’re good to go. Fun variation – shrimp tacos.
4. Instant Pot Chicken Tacos.
There are a plethora of recipes for these. The beauty of them is that you don’t have to turn on the oven or stove, which means you’re not heating up the kitchen. It’s also really hard to screw them up. I made these for the Superbowl, and they were fantastic.

5. Carnitas tacos.
If barbecue tacos are too fusion for you, but you still want pig, you can’t go wrong with carnitas tacos. You can even make them in the slow cooker, so again, you’re not heating up the kitchen. Here’s my favorite recipe from Cooking Light.
